I’m super excited to be sharing this Hummus Stuffed Veggie Tray today! It’s perfect for game day and makes entertaining effortless and delicious, not to mention extremely healthy!

This recipe is a less a recipe and more a “put together” as my youngest Bryce informed me… and he’s right! But it’s also amazing and the variations and options are endless.

I’ll be sharing below some of favorite combinations for specific vegetables and hummus flavors (the ones that I used in these photos) but please keep in mind that you can use any flavor of hummus and any veggie you like – it’s completely up to you!

Easy Entertaining

I recently received a box from Safeway that was filled with every imaginable flavor of Boar’s Head hummus (one of my ALL TIME favorite brands!) and some additional ingredients. I was super excited to see their Traditional Hummus, Everything Bagel Hummus, Sweet Chili Garlic Hummus and their dessert flavor – Dark Chocolate Hummus!

Seriously couldn’t wait to create something delicious! With so many flavors of hummus to choose from, I realized I would be remiss to highlight just one individual flavor. Enter this delicious veggie tray featuring three different stuffed vegetables and three flavors of hummus.

A quick trip to Safeway later, I had the rest of the ingredients I needed to make this hummus stuffed veggie tray just in time for game night. You can find everything you’ll need to make this easy recipe at your local Safeway.

What You’ll Need

This recipe consists of different types of hummus, an assortment of vegetables and some seasonings, herbs, and cheese. Let’s take a look at what you’ll need:

Cucumber Cups

  • English cucumbers
  • Boar’s Head Roasted Red Pepper Hummus
  • crumbled feta cheese
  • fresh chives

Stuffed Tomatoes

  • cherry tomatoes – an assortment of colors and sizes if you can find it. I used O Organics Cherry Tomato Medley from Safeway.
  • Boar’s Head Traditional Hummus – this is my go-to hummus for parties.
  • smoked paprika
  • fresh basil – snipped or chiffonade (thin strips)

Stuffed Mini Peppers

  • mini peppers – these come in bags and have a variety of colors
  • Boar’s Head Everything Bagel Hummus
  • fresh parsley

Just before serving, I finished off the tray with a drizzle of extra virgin olive oil – so good!

Serve with additional hummus and some pita chips and it’s party time!

Let’s Make It!

The hardest part of this recipe is prepping the veggies. I’m going to give you all the tips you need right here to make the process quick and easy.

Cucumber Cups

  • Starting with an English cucumber, you’re going to cut it into 1 inch pieces. Use a melon baller to scoop out the seeds from one half of the piece making sure to leave enough of a wall in place to keep the cucumber cup structurally sound. Much like you would for Twice Baked Potatoes.
  • Transfer your favorite hummus flavor into a piping bag with a wide, open tip and pipe into the cucumber cups. If you don’t have a piping bag, use a ziploc bag with one corner snipped off or simply spoon the hummus into the cucumber cups.
  • Top with feta cheese crumbles and snipped chives.
  • Just before serving, drizzle with extra virgin olive oil.

    Stuffed Tomatoes

  • Level the bottom of each tomato by slicing off a tiny bit of the tomato just so that it sits level on a board.
  • Using the smallest paring knife you have, remove the seeds from the tomato. I don’t even bother with the rest of the insides of the tomato, the seeds are what I focus on. You can gently tap the tomato against the rim of a bowl to remove any stubborn seeds.
  • Transfer hummus into a piping bag or plastic bag and pipe into the tomatoes.
  • Top with smoked paprika and snipped basil.
  • Drizzle with extra virgin olive oil just before serving.

    Stuffed Mini Peppers

  • Cut peppers into equal halves and scoop out the seeds and membranes.
  • Pipe hummus into the pepper halves.
  • Top with fresh parsley and a drizzle of olive oil.

    What To Serve With This Veggie Tray

    Whether you’re preparing this tray for game day, a potluck, or party, this easy veggie tray will be the star of the show. I recommend putting out some additional hummus flavors along with additional veggies – like baby carrots, pita crackers, pita chips, etc. for additional dipping.

    The Boar’s Head Dark Chocolate Hummus is best served with fruit and strawberries definitely make a winning combination.

    Ingredients

    Cucumber Cups

    • 1 teaspoon extra virgin olive oil
